Thekua: The Sweet, Crispy, Caramelized Prasad of Chhath Puja

Thekua is the primary prasad (offering) made during Chhath Puja, the grand four-day sun worship festival of Bihar. This crunchy, caramelized cookie is made with whole wheat flour, jaggery, desi ghee, and grated coconut, flavored with fennel and cardamom.

The dough is pressed into carved wooden moulds (saancha) depicting floral and sun designs, then deep-fried in pure ghee until golden-brown and crispy. The entire process of making Thekua is considered sacred.
